1 1/2 tsp Hills Bros.® Coffee grounds (blend of your choice)
1 3/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
1 1/2 cups semi-sweet or dark chocolate chips
Directions:
Preheat the oven to 300° F. Line a cookie sheet with parchment paper. In a large bowl or stand mixer with a paddle attachment, cream butter, brown sugar, and sugar until light and fluffy. Stir vanilla and coffee grounds together. Beat egg and vanilla mixture into butter and sugar until mixed (approx. 30 seconds). Scrape down sides of bowl using a spatula as necessary. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Gradually add flour mixture to batter and mix on low speed until fully combined. Stir in chocolate chips. Using a large cookie scoop (approx. 2-3 tbsp.), scoop the cookie dough onto the prepared cookie sheet 3 inches apart. Bake 10-12 minutes. Be careful not to over-bake! The cookies will not appear fully baked when you remove from the oven, but they will set as they cool. Enjoy (with a hot cup of Hills Bros.® Coffee, of course)!
