Mascarpone White Chocolate Caramel Cappuccino Semifreddo

- 4 eggs, separated
- ½ cup sugar
- 8 oz mascarpone cheese
- 3 Tbsp. Hills Bros.® White Chocolate Caramel Cappuccino Mix
- Fresh raspberries for topping
- Shaved white chocolate for topping
In a bowl, drop the egg yolk and sugar. Whisk together for five minutes or until it turns thick and fluffy. The color will change to pale yellow. Use an electric mixer if possible. Add the mascarpone cheese and Hills Bros.® White Chocolate Caramel Cappuccino Mix. Whisk for one minute to incorporate everything together.
Using a separate bowl and a separate whisk, whisk the egg white until you get stiff peaks, which should take about three minutes with an electric mixer. Slowly pour the whipped egg white into the mascarpone cappuccino mixture and fold it carefully. Then pour the mixture into a container and freeze overnight. Top it with the fresh raspberries and shaved white chocolate just before serving.
